Here's the ingredients I used in my omelet.
1/4 ea. yellow and green bell peppers
1 Tbls minced garlic
1 green onion sliced
2 eggs beaten
Shredded Mexican blend cheese
Deli ham cut into squares
1/4 tomato
1/4 avocado
sour cream for topping
Step 1: Stir fry your onions, peppers and garlic over medium heat.
Step 2: Turn down heat to low for about 30 seconds. Pour beaten eggs over stir fried veggies making sure they are all spread out and covered.
Step 3: Flip eggs like a pancake and immediately sprinkle with cheese, then add ham cut into squares.
Step 4: Top with sour cream, avocado and tomato and enjoy!
